Holly is the heartbeat of the pub and has made The Pony & Trap what it is today from her position as Front of House Manager. Taking over the pub at just 19 years old with Josh and her family, over the last 8 years Holly has managed the rise and rise of a highly professional Front of House team that have been the welcoming faces of The Pony & Trap. Highlighting Holly’s abilities, in January 2014 Holly was named the Publican Morning Advertiser’s Front of House Manager of the Year in the Top 50 Gastropub Awards.
With her role encompassing all manner of responsibilities, Holly remains central to the pub’s day to day activity but also manages the its event catering business which incorporates around 25 weddings, private and corporate events each year.
Josh Eggleton is Chef Patron of the Pony & Trap and heads the creative vision for the food and ethos of the pub.
He and his sister Holly have taken the 200 year old pub from strength to strength since their arrival in 2006. Now recognised as one of the most exciting places to eat in the South West, in 2011 Josh led the team to the Pony & Trap being awarded a prestigious Michelin Star which it has held ever since.
At just 31 years old, Josh remains one of the youngest Michelin Star chefs in the country and has come a long way since commencing his culinary career in a Bristol chip shop some 15 years ago.
Tanya first started working at the Pony as a waitress in 2011. It was supposed to just be a summer job, but she likes it so much here that despite leaving a couple of times (once to work for Ents24, and once to be an English Language teacher), she has always come back.
Now she works alongside Holly and Josh as a PA, answering the phones and emails, managing the reservations, and anything else that anyone needs. She can often be found sourcing supplies (from chip pots, to quail meat), going on post office runs and supplying everyone with sweets.
Rob joined The Pony & Trap team back in August 2013. He previously worked for Goodfellows restaurant in Wells before moving to London to work with Chef Pascal Proyart at One-O-One Restaurant, renowned as one of the capital’s finest seafood restaurants.
He then ventured to France where he ran a kitchen in a chalet for an entire season. Returning to the UK, he worked with one of Edinburgh’s best seafood restaurants, Ondine, with an emphasis on sourcing the freshest and most sustainable produce possible.
Rob is our fish expert and has an extensive knowledge of all things seafood related, which stems from his rich experience working with top chefs and seafood restaurants across the UK and Europe.
Our Pastry Chef Chris is a man of many talents, having previously owned his own restaurant in Bristol and even worked for one of the region's best butchers!
One-time owner and chef at The Runcible Spoon in Stoke's Croft, Chris made the move to the countryside when he joined our good friends Blagdon Butchers. While here Chris developed excellent butchery skills,as you'd expect, which he makes great use of here at The Pony & Trap. When he's not carving and cleaving, Chris is our Pastry Chef; which means he's in charge of baking all our fresh bread each day and making incredible sweet treats and desserts.
Joe starting his career as an apprentice at Gidleigh Park under Michael Caines, where he worked his way up to Commis Chef.
Joe moved to Bristol in 2014 and has been with us ever since. He’s now our Sous chef and a huge part of the team. You’ll find him running the kitchen in Rob’s absence and he always does an amazing job; he’s always smiling, a little bit cheeky and works great under pressure... great qualities for a chef.
George has been with us since 2013 and he’s a man of many talents. George studied Btec National Extended Diploma in Hospitality & Catering at the City of Bristol College, where he got a triple distinction. George has done a lot of things throughout the years, he’s been a baker, waiter, front of house, barista and even an animal keeper.
Just like Stephen, George has an excellent knowledge of wine's and spirits and also has his WSET Level 2... so when you visit, be sure to ask either for their recommendations
Stephen has been with us since 2015, starting out as a full-time waiter before becoming Assistant Manager in 2017. Stephen is hugely enthusiastic about hospitality and is always keen to learn as much as possible about food and drink. Stephen is friendly, always smiling and consistently goes the extra mile to make guests feel welcome.
Stephen has an excellent knowledge of wine and spirits and has recently completed his WSET Level 2, he's always eager to learn more about wine and loves going to tastings to try new and different wines. He's also very well travelled and even worked in hospitality in Sydney!
