Josh flips menu at newly opened restaurant Root

Our brand new restaurant Root is now open at Wapping Wharf. Root is a restaurant that puts vegetables at the heart of its menu and goes against the grain by solely offering meat as side dishes. Root will be supporting the Sustainable Restaurant Association (SRA) campaign ‘More Veg & Better Meat’ focusing particularly the proportion of veg and meat on our plates.

Our former head-chef Rob Howell, who has now taken his role to Root, has flipped the menu upside down, making veg the main event on our plates.

By maintaining a focus on sustainable eating, Josh and his team at Root will ultimately reduce the environmental impact of meat production, support animal welfare and encourage its diners to consider the health benefits of eating less meat as well as offering delicious vegetable-based dishes. On Tuesday 22nd August SRA CEO Andrew Stephen joined Josh to offer some of his own trade secrets and what he has learned from chefs who, like Josh, have experimented by creating menus with dishes full of plant-based goodness.
